Paleo Rock Hard Berry Lemonade

Since the last caveman cocktail was so well received, and we do have a holiday weekend coming up, I thought I'd post another one!  This tart, refreshing little number, while pink, is hardly girlie.  



1 shot silver tequila
1/2 c berries - I used raspberries and blackberries
Juice from 2 large Meyer or sweet lemons*
club soda


In a shaker muddle tequila, berries and lemon juice.  Add agave and ice and shake well.  Pour into a glass and garnish with a lemon.  It's delicious as is, but I like to top it off with a little club soda for the refreshing bubbles.  Cheers! 

*If you can't find Meyer or sweet lemons, add a tsp (+/-) of agave to sweeten it up a bit.  It'll make you pucker if you use regular lemons.

Paleo Lemongrass & Butter Grilled Salmon

Wild Alaskan Sockeye salmon was on sale at the market,  so of course I jumped.  The color and texture of good, fresh wild salmon puts its farmed siblings to shame.  Salmon is a great way to get protein, good fats (Omega-3's) and even Vitamin D (if you can't get your 15 minutes of sun a day).


1 lb salmon fillet - to figure out what to choose, check here
2-3 lemongrass stalks
1 tsp sea salt
1 tsp pepper
1 tbs butter
cilantro for garnish


Preheat grill on high and rinse/dry your fish.  Peel the lemongrass stalks and then beat them until they're a pulp.  You can use a meat mallet or the back of a heavy ladle.  Pulse in a food processor with a few drops of water*.  Place fish on a large sheet of foil and top with salt & pepper, lemongrass paste, and butter (you can also marinate the fish for 1-2 hours prior if you like), and place the foil on the grill. Turn heat down to med-high.  I like to use foil because fish can fall apart on the grill and it just makes my life easier.  Cook for 6-8 minutes on each side.


*You can also buy lemongrass paste in a tube in the produce sections of most grocery stores now if you're not into taking out your aggression on those pretty stalks.

Paleo Challenge Recipe: Lasagna!

This challenge came in from Facebook, and to be honest, while tasty this is a pretty labor intensive dish (there's a LOT going on), but each step builds your dish, so invest the time.  It's pretty impressive and amazingly delicious when it's done!

Paleo Spicy Turkey Stuffed Grilled Japalenos

With Memorial Day weekend around the corner, I've been working on some recipes for the grill for a party we're throwing.  Starters always seem to be a little tough, and while they can be a bit labor intensive, they're usually worth it.  Depending on the type of pepper you choose, these can have some killer kick, so be sure to warn your guests.  Also, with jalapenos, it can be a total mystery as to where they fall on the heat scale (not sure why), so test one out before you serve them. 



6-7 medium jalapenos (or any other small pepper)
1 lb ground turkey
1/2 tsp cayenne
1/2 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1 tsp salt
1 tsp pepper
Juice and zest from 1 lime

Preheat grill to high.  Cut the tops off the peppers and remove the seeds/membranes* without puncturing the pepper. In a large bowl mix the turkey and spices.  Carefully stuff the peppers - mine took about a 1/2 tbs of meat mixture - and place in a jalapeno roaster**.  Turn grill down to medium and place on the grill.  When skins blister, remove from heat.


*Suggestion, when handling peppers, wear gloves.  If you don't wear gloves, wash your hands REALLY well before you touch anything - especially your eyes.

**If you don't have a roaster, channel your inner MacGyver and try and make something to keep the peppers somewhat upright so all the juices don't run out when you're cooking them.

Paleo Coconut Flour Waffles

I put a call out for some recipe requests, and this one came in from a friend of mine.  I looked around for  recipes and found that most of them had a lot of sugar in them - be it honey, agave etc - so I made some modifications and truthfully, you don't really need to sweeten them up aside from the vanilla.  



8 large eggs
6 tbs coconut flour
2 tsp olive or (warmed) coconut oil
1 tsp honey
1 tsp salt
1 tsp baking soda
1 vanilla bean (or 1 tsp vanilla)

Pre-heat waffle iron.  Whisk all ingredients in bowl, or use a food processor, until smooth.  Add amount suggested for you waffle iron and cook accordingly.  I was able to make 4 large waffles with this amount of batter.  Top off with almond butter, berries or a little Grade B maple syrup (pictured) and you've got a weekend breakfast treat. 


These are definitely better fresh, but if you're saving/reheating them, throw them in the toaster.

Caveman Cocktails!

I'm not sure what to call this...a Caveman Cucumber Lime Fizz??  In any case, sometimes it's nice to have a refreshing cocktail with friends (while trying to resist the corn chips next to the salsa and guac).  Happy Cinco de Mayo everyone!


1 shot good tequila
2 tbs cucumber puree*
Juice from 1 lime
Perrier 
Ice cubes
Lime wedges and cucumber slices for garnish


Put tequila, cucumber puree, and lime juice in a cocktail shaker with some ice and shake the you-know-what out of it (have you seen a shake weight commercial??).  Strain the contents into the glass with ice and top off with Perrier.  Garnish with lime wedges and cucumber slices.


*Peel and seed 1 small cucumber.  Pulse in a food processor until smooth (you can add a couple drops of water if you're having trouble getting it to the right consistency.
