Paleo Rosemary Lamb Ribs

I recently placed an order from US Wellness Meats and got some lamb ribs (along with my sausage, bison, and beef).  They are a great provider of grassfed proteins, raw dairy and even pet food.  

These were so flavorful, they only needed some time in the oven a couple things.  


For the super simple recipe...




Place lamb ribs in a large freezer bag with 1/4 c olive oil, a few smashed garlic cloves, some fresh rosemary (chopped), some good salt and pepper, and couple tbs of good balsamic.  I happened to have some Zinfandel vinegar so I used that, and I'd love to try this with apple cider vinegar. Place in the fridge for 6 hours or overnight.

Remove the lamb from fridge and let it come to room temperature.  Preheat oven to 325.  Place lamb in a large baking dish and put them in the oven for about 60-70 minutes, turning at least once.  Don't turn too often, because the lamb gets a nice crust.  That's it!
