Primal Twice Baked Yams: Good vs Evil

Here's a Halloween treat.


Start by scrubbing 2 yams (you could also use sweet potatoes).  Wrap in foil and bake at 350 until you can pierce it with a knife but still pick it up without it smashing it.  

Cut in half lengthwise and scoop out the guts into 2 separate bowls, being careful not to damage the skin.  Now the fun begins...


The Good 

Handful of seedless grapes
1 tsp juniper berries, ground
Couple tbs goat milk yogurt
Salt & Pepper
Drizzle of Honey
2 tbs Sliced Almonds

Place grapes in a single layer on a baking sheet and bake at 350 unit they are soft and browned, about 15-20 minutes. (you can do this while your yams are in the oven).  Mix the juniper berries, a pinch of salt and pepper, and 1/4 of the almonds in with the yam guts.  Put it back in the oven for about 5 minutes.  Then top with yogurt, grapes, almonds and a little drizzle of honey.


The Evil


1 slice bacon bacon, chopped
2 cloves garlic, minced
handful of chives, chopped
1 tsp salt
 1/2 tsp cayenne
1/2 tsp chili powder
1/2 tsp cumin or masala

In a saute pan, cook bacon until until begins to brown, then add garlic and cook until bacon is crisp.  Add chives (save a little for a garnish!) and spices and cook another minute until fragrant.  Add the mixture to the other 1/2 of the yam guts and stir well.  Put it back in it's shell and pop in the broiler until the top browns.
