I'm excited to announce that I'll be having a very talented friend of mine guest blogging, which I'm sure all of you will appreciate because she's a paleo baker extraordinare! With our powers combined we're planning to take over the world, but in the meantime we'll just melt your faces with more paleo recipes.
Welcome aboard Joanie - and what a recipe to kick off!
These banana muffins are DENSE, sweet, and dangerously delicious, so share with someone you love.
2c almond meal
2tsp cinnamon
1 dash allspice
pinch seal salt
(In a separate bowl)
2 ripe bananas
2 eggs
1T honey
Preheat over to 300. Grease and 'flour' muffin pan, or use muffin cups. Cut up bananas and mash in a bowl until the chunks are very small. Save some slices to put on top. Beat in the banana, eggs and honey vigorously until the mixture is smooth and fluffy (about 2 min).
Combine wet with dry ingredients. Put into muffin pan and top with a few slices of banana. Bake for 30 minutes or until toothpick comes out clean. Yields about 9-12.
You can also top with dark chocolate chips or roasted pecans (pictured above)
